KEY LIME PIE ENERGY BARS
20 pitted deglet dates (or 10 medjool dates, pitted)
3/4 cup whole almonds
3/4 cup raw cashews
1/4 cup unsweetened shredded coconut
Zest of 2 limes
Juice of 1 lime
Pinch of sea salt
1. Add all ingredients into a food processor and process. If the mixture is too dry add more dates and a small amount of water. If too wet add more nuts. Mixture should be crumblry
2. Press mixture into a parchment paper-lined baking sheet forming a large square.
3. Place mixture into the refrigerator to cool.
4. Cut the hardened mixture into bars. Wrap in parchment paper then seal in closed container. Place in refrigerator for several days.
