PEPPERED STEAK SKEWERS
1 lb. sirloin steak, cut into 1” cubes
½ green bell pepper, cut into 1” pieces
½ yellow bell pepper, cut into 1” pieces
½ orange bell pepper, cut into 1” pieces
1 medium white onion, peeled and cut into 1” pieces
3 garlic cloves, minced
2 tablespoons olive oil
1. Combine olive oil, garlic, pepper and other seasonings in a bowl; this is your rub. Coat skewers with rub, cover and refrigerate for 4+ hours (or overnight), so that steak has time to soak in all the seasoning flavors.
2. If using wooden skewers, soak them in water ahead of time for about 10 minutes, as this will prevent them from burning on the grill.
3. Stick steak, bell peppers and onion alternately on skewers.
4. Heat grill on high. Once hot add skewers in and cook each side for about 5-7 minutes (so you only need to turn them once), or until steaks have reached desired doneness. Serve immediately.
